Saturday, April 7th – DAY 1
Arrive to Mariscal Sucre International Airport, Quito

Sunday, April 8th – DAY 2


Visit Mitad Del Mundo, a monument and museum celebrating the equatorial line and the indigenous people of Ecuador. Tour Quito’s spectacular historical district, including colonial churches and plazas. Orientation with guides Jenny Samaniego, Jody Hayden and Gail Ambrosius will include an overview of the week’s activities, plus the first of many chocolate tastings.

Monday, April 9th – DAY 3


Spend the day visiting our cacao farming partners at El Finquerito, a small family farm located in the Puerto Quito region of Pichincha province. Hear about the farm’s efforts to preserve the rare Nacional cacao variety and learn how El Finquerito controls quality during harvest and post harvest production. Harvest a cacao pod and taste the fresh pulp.

Tuesday, April 10th – DAY 4


Visit farming families and the collection center of APROCA (Organic Producers Association of the Atacames Canton) in the coastal province of Esmeraldas. Learn about the importance of parcel maintenance, selection of pods, fermentation and drying (harvest & post production processes) during our cacao field workshop. Take part in a cacao cut test. Discussion with farmers and co-op managers about the day-to-day workings of cacao farming and preparation and learn about their efforts to recruit and retain younger generations of farmers.

Wednesday, April 11th – DAY 5


Relax on the beach in Esmeraldas before we return to Quito. Enjoy an Around The World Chocolate Tasting and dinner at Quito’s Galeria Ecuador, a new concept restaurant and gallery celebrating the unique ingredients and cuisine of Ecuador

Thursday, April 12th – DAY 6


We’ll kick-off two days of Conexion chocolate education with an introduction to bean to bar at the chocolate factory, including receiving dried cacao, hand sorting, roasting, winnowing and more. Proceed to chocolate classroom for a guided chocolate liquor tasting and a tasting of various Ecuadorian chocolates. Our afternoon workshop includes a presentation on sourcing, formulation and application of Conexion chocolate with time for discussion.

Friday, April 13th – DAY 7


A day of hands-on chocolate fun. Work with experienced chocolatiers and peers to temper and make a variety of popular chocolate confections and desserts including truffles, mousse and mendiants using Conexion chocolate. Plenty of time for open discussion, skill-sharing and troubleshooting tips. Taste and review flavor/texture of each recipe Cocktail party!

Saturday, April 14th – DAY 8


Travel to Otavalos for a guided tour of the largest artisan market in South America. Shop for hand-made artisan crafts and textiles. Visit a Kwicha weaver and enjoy a private concert of Kwicha music performed by our dear friends. Return to Quito for a final celebratory dinner.

COST: 2,350.00/person (airfare to and from Quito, Ecuador not included)
